Carrot 1700gm (peeled and grated) Ghee 30 gm Paneer 200gm Milk 350 ml Nuts (mix) 40 gm Cardamom 2 pods Orange peel (an inch) 😊 for aroma Calorie free sugar: I used Monk Sugar Note: ~2 kg raw carrots were used. After peeling and prep, final usable quantity was ~1700 g.
Method . Dry the carrots Add grated carrots to a wide non-stick pan on high heat. Cook while stirring intermittently until excess moisture evaporates and the carrots reduce in volume. . Add milk & soften Pour in ml milk and continue cooking on medium-high heat, stirring occasionally, until the carrots soften and the mixture thickens. . Prepare paneer blend In a blender, add g paneer with ~ ml milk. Blend into a smooth paste. . Incorporate protein Add the paneer blend to the carrot mixture. Cook on medium heat, stirring continuously, until everything combines into a thick, halwa-like consistency. . Sweetener prep Add Calorie Free Sugar to the halwa and mix well. . Nut tempering In a small pan, roast chopped mixed nuts in g ghee until lightly golden. Keep aside. . Aroma infusion (flavour highlight ✨) In a blender jar • Add cardamom seeds • Add an inch piece of orange peel • Add a little calorie Free Sugar (helps blending) Blend this mixture into a fragrant powder. . Final assembly Add Aromatic powder to Halwa Mix well. Finish by topping with the roasted nut Also rest of the ghee. The outcome was also gm ready Halwa Makes gm serving as approx calories
