~75–80g Palak (spinach) (Half of half gaddi — approx. what you get for ₹10–₹12 worth) 100g Curd (dahi) 1 tsp Sarso ka tel (mustard oil) – ~5g 2–3 pinches Hing Red chilli powder – as per taste Salt – as per taste (while cooking + adjust after mixing)
Wash palak thoroughly. Chop it very fine into small pieces. Heat tsp mustard oil in a pan. Add hing and red chilli powder Add chopped palak + salt. Cook on medium flame till: It releases water Water evaporates Leaves are completely soft Let it cool fully. Mix cooked palak into g fresh curd. Adjust salt if needed. Add red chilli powder. And that’s it. Creamy + smoky + slightly spicy = comfort bowl.
