300 g chicken breast (cubed or sliced) • ½ tsp mustard oil • Salt to taste • ½ tsp black pepper • ½–1 tsp ginger-garlic paste (optional) • Vegetables of choice (capsicum, beans, carrots, onions – optional) • 1 medium tomato (for roasting) • 3–4 garlic cloves (for roasting) • 2–3 green chillies • Lemon juice (to taste) • Fresh coriander leaves (optional garnish) • 1 tsp cornstarch (optional, for saucy texture) • 2–4 tbsp water (as needed)
️⃣ Light Pan Fry the Chicken • Heat ½ tsp mustard oil in a pan. • Add the chicken pieces and lightly pan-fry on medium heat to remove raw smell. • Add salt, black pepper, and ginger-garlic paste (if using). • Toss in vegetables of your choice. • Cover with lid and cook on low flame (simmer) until chicken is almost done. ⸻ ️⃣ Prepare the Smoky Mash • Roast the tomato, garlic cloves, and green chillies directly on flame or in a pan until slightly charred. • Peel (if needed) and mash them together into a coarse paste. ⸻ ️⃣ Combine & Simmer • Add the roasted mash into the chicken. • Add – tbsp water depending on how thick or saucy you want it. • If you prefer a slightly gravy-style consistency, mix tsp cornstarch in water and add. • Let everything simmer together for – minutes. ⸻ ️⃣ Final Touch • Turn off heat. • Squeeze fresh lemon juice. • Garnish with chopped coriander leaves.
