Butternut squash chopped :150gms
Ghee :3gms
Cous cous soaked for halfan hour : 50gms
Cumin seeds : 1/4 tsp
Mustard seeds : 1/4tsp
Curry leaves :4-6
Green chillies chopped : 3-4 , adjust as per your spice level
Red chilli powder :1/4tsp : use as per your spice level
Onions chopped :45 gms
Turmeric powder :1/4 tsp
Salt as per taste
Lime juice :1/2 tsp
STEPS: . Heat pan . Add cumin seeds and mustard seeds . Add curry leaves . Add green chillies and sort well . Add onions and saute till soft . Now add butternut squash and saute till soft . Now add salt and turmeric powder and chilli powder and saute for mins . Now add soaked cous cous and saute well until everything is mixed well and cook in low flame for - mins . Now add some lime juice and mix well and serve hot with some salad /cucumber
